Broccoli & Stilton Pesto Pappardelle

Coming from a family of particularly adamant meat eaters, I thought it would be a bit of a challenge to woo them with today’s ensemble, we all like a challenge, right? – I travelled from London to my home town of Guildford to visit the family for the weekend and (for a change) surprised them with a vegetarian dish for dinner. The whole charade reminded me of a slow-burning movie with a great ending; no one is quite sure if they like it at first, but towards the end they’re wanting more. Although, I could have sworn I caught my brother in-law searching for the non-existent steak at the bottom of the bowl…


As a teenager, I used to think that being eccentric with my ingredients was key to a delicious, somewhat fashionable meal. I would pour ample amounts of pretentious elements into my pre-conceited masterpiece in hope that I would be crafting the next best thing since sliced bread. – I was wrong :'(


This dish is super easy to make and is a bit of a play on the broccoli and stilton soup marriage (one of my favourites). The combination goes as well in a bowl with crusty bread as it does with crushed pine nuts and pasta, it just works. What I like about it is the simplicity; LESS IS MORE. Yep you’ve heard it in some sort of parallel universe before right? I sure did, but like most things I got told when I was a teenager,  it more than likely got quickly ignored. Nowadays it is a staple rule I live by, for cooking at least…
