Vietnamese Summer Rolls (v)

I’ve always been obsessed with asian food. There’s something particularly rewarding about being served a dish which looks like it has had a little bit of heart poured into it, you just don’t develop the same feelings from cheese, chips and gravy. Back in November, I ventured over to Vietnam with some pals and had some of the best food I’ve ever tried; these being strong contenders.

Fortunately for us on our trip to Vietnam, we had a close friend who was currently working out there which inevitably meant we got the best out of Vietnam, especially the food. Whether we were having a prawn curry for breakfast on the beach coupled with a Ca phe sua da or a hugely popular late night Bánh mì, we did it all. 

IMG_4577_WT I love referring back to my rule of keeping things simple, these summer rolls do it justice to the highest degree. Although they are a little fiddly to make, the concept is basic. The cashews really steal the show in these little treats though, they gel with the spring onions and bean sprouts perfectly, it just works. So whether you’re planning an impressive starter, or just want a healthy snack, these are definitely worth adding to your culinary hit list.
